Bison Taco Salad 1 lb. ground bison 1 (8 oz.) bag corn tortilla chips ½ head romaine lettuce, chopped 2 tomatoes, diced 2 cups cheddar cheese, shredded ½ cup onion, chopped ¾ cup salsa
In a large skillet over medium high heat, sauté the ground bison for 5-10 minutes or until browned. Crumble tortilla chips on a large plate. Layer with the bison, lettuce, tomatoes, cheese, onion and salsa. Serves 2-4.
Bison Caesar Salad 1 lb. bison sirloin steak, 1-inch thick 2 teaspoons olive oil 2 cloves garlic, minced ½ teaspoon cracked black pepper ½ teaspoon salt 1 package Caesar Salad Mix Grated Parmagiano-Reggiano Cheese (optional)
Cut bison steak lengthwise in half, then crosswise into ¼-inch thick strips. Combine oil, garlic and pepper in large bowl. Add bison and toss to coat. Heat large skillet over medium-high heat until hot. Add ½ of bison mixture, stir fry 2-3 minutes or until outside surface of bison is no longer pink. Remove from skillet. Repeat with remaining bison. Season with salt. Combine bison with lettuce and dressing from salad mix in large bowl. Sprinkle with croutons from mix and cheese. Serves 4.
